Mojo de agucate ( Green avocado Mojo )

  • 1 Ripe avocado
  • 2 Cloves Garlic
  • 10ml White Wine Vinegar
  • Oil
  • 1tsp cumin
  • Pinch of salt
  1. Crush and peel garlic
  2. De-stone and peel avocado
  3. Place avocado,garlic, vinegar, salt and cumin in a blender.
  4. Lightly blend until all ingredients have mixed together.
  5. Slowly add the oil a little at a time until you get the thickness and taste that you like.
    Any oil can be used, I find that extra virgin olive oil over powers the flavour. The last batch I made was made with sunflower oil and it was great.
