Spiced Corn and Nut Mix

This is ideal as a snack or can be served along with pre dinner drinks. It's a bit unusual and is bound to cause comment

  • 4tbs Vegatable Oil
  • 60g Popping Popcorn
  • 1 Garlic Clove
  • 60g Almonds (Plain)
  • 60g Walnuts
  • 60g Peanuts
  • 1tsp Soy Sauce
  • 1tsp Curry Powder
  • 1tsp Chilli Powder
  • 60g Raisins
  • Salt to season


  1. Heat 2tbs oil in a saucepan and add the popcorn.
  2. Cover and cook on a high heat for 3-5 minutes, hold the lid firmly and shake the pan until all the popping stops.
  3. Turn popcorn into a dish, disregarding any unpopped popcorn.
  4. Melt the rest of the oil in a frying pan.
  5. Add all the nuts.
  6. Stir in the soy sauce, curry and chilli.
  7. Cook over a medium heat for 2-3 minutes, stirring frequently.
  8. Remove pan from heat and stir in the raisins and popcorn.
  9. Season with salt to taste.
  10. Serve warm or cold.

Any combination of nuts can be used, peanuts go well. The spices can be adjusted to taste.
