Wholemeal Shortcrust Pastry


250g Wholemeal Flour
Pinch of Salt
½ tsp Baking Powder
65ml Olive Oil
1 tsp Caster Sugar
4-6 tbsp cold water


Place flour and baking powder in a bowl.
Stir in the olive oil to start, then rub in until it resembles breadcrumbs.
Dissolve sugar in the water.
Sprinkle enough mixture over the flour to draw the mixture together stirring with a knife.
Turn the dough out on a floured board.
Knead lightly until smooth.
The is best cooled in the fridge for 15 minutes before rolling.

Pastry can be kept in the freezer until required.
