Griddle Cakes


200g Wholemeal Flour
1 tsp Salt
50ml Olive Oil
50g Sugar
1 Egg
30 ml milk


Mix flour and salt.
Rub in Olive Oil.
Stir in Sugar and currants.
Mix to a fairly stiff dough with the milk.
Roll out to about 5mm in thickness and cit into 3/4" rounds.
Bake on a moderately hot griddle for about 3 minutes on each side.

These are lovely spread with butter and jam or just simply on their own.
