300g Cod (or similar) Fillets
10g Olive Oil
200g Grated Onion
4g Parsley Chopped
Oil to fry
Salt to taste
Peal and salt potatoes, put in saucepan cover with water and bring to the boil.
When almost tender add fish to the saucepan.
Cook until soft.
Drain, then add olive oil, onion, parsley and egg.
Divide into 8 equal parts, mould into cakes.
Heat oil in frying pan, cook cakes a few minutes on each side until nicely browned.
The quantity of fish cakes depends the size that you like your fish cakes.
I have also cooked the cakes on the griddle, they turn out fine.
