Lentil and Tuna Salad


  • 200g Cooked Lentils
  • 220g Tin Tuna in Brine
  • 1 Diced Tomato
  • ½ Diced Onion
  • 2 tbs Olive Oil
  • 1 tbs Lemon Juice
  • 1 Crushed Garlic Clove
  • ¼ tsp Cumin
  • ¼ tsp Ground Cilantro
  • Hand of fresh cilantro
Cooking instructions

  1. Put lentils, tomato, onion into a bowl, carefully mix together.
  2. In a little jar put the olive oil, lemon juice, garlic,cumin & cilantro
  3. Put the top on the jar and shake well.
  4. Add the dressing to the lentil/tuna carefully mix in.
  5. Add fresh cilantro just before serving.

This salad is ideal for putting inside toasted pitta bread, buffet, BBQ etc.
