400g Sweet Potatoes
2 Large Cooking Apples
3 tbs Honey
1 tbs Lemon Juice
50g Olive Oil
25g Brown Sugar
Slice both the raw sweet potatoes and cooking apples.
Layer alternately in a shallow baking dish.
Combine the honey, oil and lemon juice.
Drizzle over the top of the sweet potatoes and apples.
Sprinkle the brown suger over the top.
Sprinkle the nutmeg over the top.
Carefully pour the water over the top.
Cover with foil and bake for 30 minutes at 180ºC (350º F).
Remove foil and bake for a further 20 minutes.
The honey/oil and sugar should be thick and the potatoes tender.
