Pita Bread (Wholemeal)


7g Dried Yeast
1 Tbsp Honey
225ml Warm Water
30ml Olive Oil
9g Salt
300g Wholemeal Flour
1 tsp Cornflour


Dissolve honey and yeast in 125ml warm water let stand until it froths.
Combine 100ml water, olive oil, salt and yeast mixture in a large bowl.
Add combined cornflour and flour a cup at a time mixing well until a soft dough is formed.
Tip out onto a lightly floured surface and knead for 8-10 minutes.
Place into a lightly oiled bowl and leave to rise in a warm place for an hour or until the dough has doubled in size.
Place dough on a lightly floured surface and punch air out of the dough knead lightly for a few minutes.
Pinch out into 8 equal parts.
Roll each part into 6-7" rounds.
Cover and leave to rise in a warm place for 25 mins.
Cook on a griddle for 3 mins each side or until lightly browned.

If you wrap them in a damp tea towel when you take them off of the griddle they will stay soft and pliable. Cut in half and slice open with a sharp knife to form a pocket, or simply cut them in halves or quarters.
Can be filled or used with dips etc.
Will keep for several days wrapped in cling film and kept in the fridge. Can be warmed up in the microwave on a low setting.
