This version of tomato salsa with make a rich coloured spicy salsa which is ideal for Albondigas or to use with pasta etc.
1 Kg Tomatoes Chopped
2 tsp Sugar
2 Cl Garlic
1 Onion Finely Chopped
1 tsp Dried Oregano
1 tsp Dried Thyme
½ tsp Chilli Powder
1 Bay Leaf
Fry onion and garlic until soft.
Add chilli powder, cook for 2 minutes.
Add tomatoes, sugar, oregano, thyme, bay leaf, salt and pepper to taste.
Bring to the boil and simmer for 15 -20minutes.
Use a puree'er to make a rich coloured spicy salsa.
