Ensaldilla

This is the basic recipe, olives, red bell pepper, onions can be added as well. Some people use more mayonnaise that others, I find it can be come to sickly if you use too much. I have also made it without topping with mayonnaise which also works well.

Ingredients

  • 300g Potatoes cut into small cubes
  • 200g Can Sweetcorn
  • 200g Can of Peas
  • 220g Tinned Tuna in Vegetable oil
  • 1 Hard Boiled Egg
  • Mayonnaise
  • Salt pepper to taste
  • mixed dry herbs.

Method

  1. Cook cubed potatoes. Cool and place in large bowl.
  2. Add tuna, egg, peas and sweetcorn, mix well.
  3. Add herbs, salt and pepper, mix well.
  4. Bind together with 2 tbs of mayonnaise.
  5. Transfer mixture to serving dish, press into dish.
  6. Top with more mayonnaise to seal, decorate with strips of red bell pepper, olives etc.
